Spaghetti alla carbonara & yummy granola!

Today is the first day I've had a Saturday off in a long time. I decided on making some delicious granola this afternoon, but it took me forever to decide what to make for supper. I wanted to bake a chicken but didn't know what to cook with it. Then I wanted pasta, but wasn't sure what kind. We ended up making delicious spaghetti alla Carbonara alla Nigella Lawson. I've made it several times and had it at a restaurant, and this recipe is still  my favorite. And definitely an indulgence. Just remember not to eat too much!

Spaghetti alla Carbonara

500g spaghetti
olive oil
1/4 package bacon, cut up in small pieces. (You're supposed to use pancetta, but it's ridiculously expensive around here)
60ml white wine
60ml heavy cream
3 eggs
few tbsp parmesan
pepper

Mix eggs, cream, parmesan & pepper. Set aside.
Put a tbsp oil in frying pan & add bacon, cook until crispy. Add wine and reduce until it gets syrupy.
Meanwhile, cook pasta in very salty water. & drain. As soon as you drain pasta add bacon and all syrupy wine, stir. Add egg cream mixture, little at a time, stirring as you go. The eggs will cook on contact of the hot pasta, but not make it like "cooked eggs", it stays saucy. I didn't have to use all the mixture, because I didn't make that much pasta. You can add as much as you like.

Micheal Smith's Country Granola. (this recipe is halved and adjusted to my taste!)
1/2 cup vegetable oil
1/2 cup honey
1 tbsp vanilla
1 tbsp cinnamon
1/2 tsp nutmeg
4 cups oats
1/2 cup sliced almonds
1/2 cup chopped walnuts
1/2 cup flax seed or flax meal
1/2 tsp salt
1 cup raisins

Preheat oven at 325F
In a bowl, mix oats, almonds, walnuts and salt.
Keep raisins to the side.
In a saucepan, simmer vegetable oil, honey, cinnamon and nutmeg. Once simmering, add to oats and stir.
Put on cookie sheet and bake 30-40 minutes, stirring every 10 minutes. Once cooled stir in raisins.







I bagged this up into sandwich bags and its supposed to last up to a week or two. I also added extra cinnamon once it was baked and mixed with raisins. We're cinnamon-aholics at this house!
