There has been so much stuff going on in my life recently! I feel like I have been extremely neglectful to my blog! I am moving to Dartmouth April 22nd so in between the cooking, working and exercising I haven't seemed to have much time to do anything or even take pictures of my food! I hope everyone will forgive me and enjoy the delicious treats I'm about to share.
I have a crazy sweet-tooth lately. Well..not just lately, but always. Do you ever have the days when you just need to cook something quick & sweet? I had those days a couple times in the last few weeks and I ended up making flourless peanut butter cookies and cherry squares. These recipes are definitely not health food but there will be more extremely healthy things coming up in my blog that I'll mention at the end of this post.

Easy & Delicious Flourless Cookies!
1 cup peanut butter
1/2 cup sugar
1 egg
Preheat oven to 325F.
Beat the egg with a whisk.
Mix in peanut butter and brown sugar.
Form small balls and put on baking sheet lined with parchment paper.
Press down cookies with fork or spoon.
Bake 12-15 minutes. Don't over cook!
They wont really look cooked until they settle for a few minutes, then place them on a cooling rack!
Enjoy the easiest cookies in the world!
Cherry Squares (However, I think they should be called Heaven!!!)
Base -
1 1/4 cup flour
1/3 cup brown sugar
1/2 cup almost melted butter
Filling-
2 eggs
3/4 cup brown sugar
1 tbsp flour
1/2 tsp baking powder
1/8 tsp salt
1 cup coconut
1/2 cup chopped walnuts
1/2 cup chopped maraschino cherries
Frosting-
1 cup icing sugar
2 tbsp butter softened
1/2 tsp vanilla
1 tbsp water
Preheat oven at 350F.
Mix all ingredients for the base.
Pat down in square pan and bake 10-15 minutes until lightly brown.
Mix eggs, sugar, flour, baking powder and salt until well combined.
Add the coconut, walnuts and cherries; mix well.
Pour mixture over base and bake 25 minutes.
After squares are cooled mix together all ingredients for the frosting with a whisk and spread over squares.
Cut into bite size squares and enjoy!
I also got anxious and poured the icing over before it was completely cooled, so this is what happened! Oh well! Still yummy!
I really hope everyone enjoys these delicious treats! Even though I may seem to only post more calorie intensive foods, it is definitely not all I eat! I have been eating otherwise pretty clean and I wanted to share with everyone how I cook on a pretty much daily bases and how I try to eat clean. I will post recipes on breakfasts, lunches, suppers and snacks and how I try to avoid cravings. Try being the key word obviously, as this post is based on sweets!
